A very nice tea!
I always buy this tea at a local Turkish grocery store. I am not a Turk so I just brew it 'English style' with a teapot. I have found it to be a very nice tea. When steeped for 2,5 minutes in water that is just off the boil, you get a great 'cuppa'. The taste is earthy, floral and sweet. I can easily understand why the Turks are so fond of their çay!

Absolutely no preservatives, pesticides or chemicals, this is the way tea has been made for centuries. Rize tea or Çay is a form of black tea. Produced in Rize Province on the eastern Black Sea coast of Turkey which has a mild climate with high precipitation and fertile soil, when brewed it is mahogany in color. People throughout Turkey may drink tea at any time of the day. In addition to being consumed at home, it is served in Turkish cafés by a çayci (tea-waiter), in small, narrow-waisted glasses. Tastes GOODS, Looks GOOD, and is EASY!
This is the BEST cookbook! I am NOT an experienced cook, but I was even able to make the BREAD (from scratch!) for the meat filled pastry (Katmer with Kiymali filling)! I had no trouble understanding the instructions or finding the ingredients (they were ALL available at my local grocery!)! Another great thing about it is the photographs! There are a LOT! (If it looks good, then you want to cook it, right?) I have cooked my way through half the recipes and loved them all! This book made me a much more confident cook! Oh, I almost forgot to say, everything tastes GREAT! I don't even have to go to a Turkish restaurant anymore!

I am keen on collecting cookbooks. As I am Turkish I have a special interest in Turkish cuisine. I have 9 books on this topic, 4 of them in English. Ozcan Ozan's book is the best among them. Turkish food, definitely very tasty, but is not all that easy to prepare. Ozan explains each step very clearly and the measures he gives are very accurate. Apparently he genuinely put a lot of thought into it and wrote it in a way that everybody could apply.

A "MUST HAVE" for those who want to cook authentic Turkish
Let me just tell you how good this cookbook is.... When I met the man who would later become my husband, I wanted to impress him by preparing some food from his country. I got this book from the library (and later bought it). I had NO IDEA what Turkish food looked like, tasted like, NOTHING. Zero. I flipped through this book and asked him what he liked. He picked out some foods that he had really been missing since his move to the US. These items also happen to be about the most difficult to make--things most people in Turkey don't make at home anymore because they are easier to buy ready made...I made Baked Manti, Simit (Turkish bagels), and Asure the first night...and apparently I made them so well that the whole Turkish community in my town started showing up for our dinner parties for a taste of home. If a person who had no idea of the cuisine could make food THAT authentic on the first try, then the cookbook MUST be excellent. I have sinced moved to Turkey and after 4...

`Classical Turkish Cooking' by Ayla Algar is a great exemplar of what a cookbook describing an important national cuisine should be, if there are few or no other books on the subject in English. Excellent Reference to Turkish Cusine
This is a well laid-out guide to Turkish food. MS. Algar provides historic detail, method for unfamiliar techniques, and a good mix of recipes from savory to sweet that have a distinctive Turkish touch. It is a cookbook you can actually sit down and read. While she does not give the technical detail Julia Child brings to her books, this book is not about being a chef, it is about introducing Turkish foods into your home, and is an excellent reference. It also provides recipes for those things you may not find easily available - just how do you make rose water if you can't find it? There is a recipe! I want a copy for my kitchen library, and you might too.
